i ACTUALLY baked - blueberry cheese tarts

funny rite?


i really did bake it ok. after days and days of procrastinating, and since the blueberries were going bad, i finally decided to make it and bake it.

you do know the love i have for tarts right? you can read it here.




well, if you feel like baking something nice for someone special this valentines, or if the blueberries you bought aint that sweet for eating, or perhaps something for the festive season, maybe you can give this recipe a try.



INGREDIENTS - for pastry

120g butter
80g icing sugar
20g milk powder
240g plain flour
½ egg


INGREDIENTS - for filling
250g fresh blueberry
200g sugar
10g corn flour
10g potato starch (which i
skipped)
30g water


INGREDIENTS - for topping
200g cream cheese
60g mixed berries yoghurt
60g icing sugar
1 egg


METHOD for tart crust



1. CREAM butter and icing sugar until light and fluffy.



2. ADD in egg and flour and use hand to form dough (be-careful not to over beat).



3. SCALE dough to 30g and press down onto the tart mould
(edges should be thicker to ensure a better-shaped tart).


4. Allow to REST for 30 minutes in chiller (in my case, fridge).




METHOD for filling



1. BOIL blueberry, sugar, and water over low heat and cook for 40 minutes.


2. THICKEN with corn flour, potato starch, and water,
and SIMMER until thickened.




METHOD for topping



1. WHISK cream, yoghurt, icing sugar and egg until emulsified. Leave aside for later use.




ASSEMBLING



1. Fill half of tart crust with berries jam.



2. Top with 1-2 tablespoon of topping.



3. Garnish with more berries.



4. Bake in preheated oven of 180°C for 25 minutes.



5. Remove from mould tin and let cool.


p/s: recipe makes 14 tarts.

let me tell you, it tastes better than it looks.

making it, however, is really time-consuming. it took me 3 hours to finish what i started.





but i am proud to say, i actually made blueberry tarts without the help of anyone.
not even my mom coz she was busy entertaining her friend who came.




believe it or not, its true.

    dear jordan, the tarts are real good man~ trust me. cheh wah.. i like damn perasan la. but its ok.. we share the same love we have for tarts~ =) which is a totally healthy thing~


    well, dear baby, i am not sure if it is the same with or without potato starch. as i had all the ingredients except potato starch, i skipped it, because only 10g is needed. if i were to buy a 500g potato starch just for the tarts, i would waste the rest of the 490g.
    umm... it tastes exactly the same like a normal crust. only thing, mine nicer~ hehe~~
